Crunch Nut Crumble

SERVES 4 - 5

INGREDIENTS
225g (8oz) blackberries
2 medium cooking apples, peeled, cored and sliced
2 tsps cornflour

100-150g (4-5oz) sugar
100g (4oz) plain flour
50g (2oz) hard margarine, diced
50g (2oz) demerara sugar
25g (1oz) bran flakes, coarsely crushed
50g (2oz) chopped mixed nuts

Preparation time: 20 minutes.

Cooking time: 40 - 45 minutes

Oven: 190ºC, 375ºF, Gas Mark 5

1. Place the blackberries and apple slices in a bowl. Mix together the cornflour and sugar and sprinkle over the fruit. Toss well until thoroughly coated. Turn the mixture into a 1.2 litre (2 pint) pie dish.

2. Sift the flour into a mixing bowl, add the margarine and rub in with the fingertips until the mixture resembles coarse breadcrumbs. Stir in the demerara sugar, bran flakes and chopped nuts. Spoon the mixture over the fruit and flatten slightly with the back of a spoon.

3. Cook in a preheated oven for 40 - 45 minutes until the fruit is tender and the topping light golden.
