SEAFOOD CHOW MEIN

Chinese noodles cooked with mussels, cockles and vegetables and served in a rich ginger sauce and wine flavoured sauce.

Ingredients

Half green pepper, seeded

Half red pepper, seeded

15ml/1 tbsp. oil

Half tsp. chopped garlic

Half tsp. chopped fresh ginger root

Half spring onion, chopped

125g/5oz uncooked mussels (unshelled)

50g/2oz uncooked cockles(shelled)

15ml/1 tbsp. Chinese wine

30ml/2 tbsp. soy sauce

Salt and pepper

STEP 1
Cook the noodles in boiling , salted water . Rinse them in cold water and set aside to drain.

STEP 2
cut the peppers into thin slices.

STEP 3
heat the oil in a wok and stir-fry the garlic, ginger, peppers and spring onions for 1 minute.

STEP 4
Stir in the mussels, cockles, Chines wine, Soya sauce and the cooked noodles.

STEP 5
Heat the noodles thoroughly, turning them in the sauce, to coat evenly and mix together well, using chopsticks. Season with salt and pepper and serve when cooked through completely.
