Channa Sag (spicy Chick peas & spinach)
Mouth watering Vegetarian side dish with lots of flavour
SERVES 4
Ingredients
15 ml / 1tbsp vegetable oil
1 onion, thinly sliced
1 clove garlic, crushed
5 ml / 1tsp cumin seeds
10 ml / 2tsp ground cumin
5 ml /1tsp ground coriander
3 tomatoes, peeled and roughly chopped
10 ml / 2tsp fresh tamarind
225 g / 8oz frozen chopped spinach
salt to taste
1.25ml / quarter tsp. cayenne pepper
1 X 420g tin chick peas, drained
Step 1 Heat the oil in a saucepan. Add the onion and garlic and cook for ten minutes or until soft. Add the cumin seeds and cook for 1 minute. Stir in the ground cumin and coriander.
Step 2
Add the tomatoes and cook for 4 to 5 minutes or until beginning to soften. Stir in the tamarind and add the spinach and cook, stirring, until thawed. Cook briskly for 2 - 3 minutes to evaporate the moisture than stir in the salt and cayenne pepper
Step 3
Stir in the chick peas and cook for a further 2 minutes until piping hot, before serving.
